No Knead Baguettes with Tomatoes and Olives
I have seen these recipes everywhere and each time think, “Huh?” So I finally decided to try one. In this case, the recipe was from Steamy Kitchen.
Apologies for lack of process photos but my hands were just a leeeeetle bit busy with the flour!
Ingredients
3 cups (400 grams) bread flour
1/2 teaspoon table salt
3/4 teaspoon sugar
1/4 teaspoon instant or other active dry yeast

Homemade Dog Biscuits
Ok, we’ve gone from human to canine cooking this time, but when faced with this:
and this:
how could I refuse? Plus dog biscuits are getting expensive!
So I thought I’d try to make some at home. Fingers crossed they’ll eat them!
Recipe was originally from here , but I halved the quantities (and substituted some things) for the first time just in case the dogs refused...

Coconut and White Toblerone Cookies
I’ve had this recipe for ages and kept meaning to try it but kept coming up against the white chocolate and how it’s hard to get the god stuff here. Today I had a brainwave in the supermarket- just use white Tolberone! They are soooooo goooooood.
Original recipe is here
Ingredients
200g softened butter
½ teaspoon vanilla essence
160g icing sugar, sifted
1 egg
260g plain flour,...

Glorious Apple-Pear Muffin Win!
After our disastrous muffin fail (yes, you can screw up a muffin recipe), we bravely took up spoon and bowl for our second attempt. This time it was a gloriously unqualified success! *APPLAUSE* The recipe is based on the Pioneer Woman’s Blueberry Muffins , but as we live in land of no blueberry, we made do with apples and pears.
Ingredients
3 cups minus 2 tablespoons flour

Almond Cookies
Note to self: Read instructions carefully.
This is probably the zillionth time that I haven’t read the instructions to the end. You know how it is, you get to the second last line, the one that says “put into oven” and your brain switches off. Well, mine does, anyway. I think it may have to do with all the skim reading we do online nowadays. Have you noticed? When was the last...

Cheesy Herb Popovers
Just one thing: yummmmmmm! Oh, and sorry, I forgot to take pictures of the making process. I was just too too excited to get started. I found the recipe over at SoupBelly but had to substitute cooked onions for the chives. I did manage to take lots of after pics before they were devoured, so please try these. Delicious first thing in the morning for breakkie.
These were baked in a...

Hazelnut Passionfruit Thumbprint Cookies
This was our second recipe of the day after the Great Muffin Failure. Luckily, this one passed with flying colors! We had this for afternoon tea and used them to bribe family members the next day. Original recipe from the divine Smitten Kitchen used chocolate, so experiment with yours!
Ingredients
1 cup hazelnut meal
2/3 cup sugar
1 cup plus 1 tablespoon flour
1/4 teaspoon salt

Spectacular Muffin Fail
No idea how this happened, but we are faced with irrefutable evidence that it did.
Ehm. Not much else to say really. They taste good. We will try again, please hold.

Simple and Rich Chocolate Brownies
Brownies are like chocolate-chip cookies- everyone has a special way of doing them and expectations of how they should taste. These are from my family’s recipe and bring back memories of dozens of birthdays, dinners and picnics. I’m biased, but these brownies rule! We use cashews because it’s the most available nut here.
Ingredients
125g butter
185g dark cooking chocolate

Polenta Yogurt Muffins
I had a friend come back from the outside world a couple of days ago, bearing the bestest present I could ever wish for; a muffin tin! I made these yummy polenta muffins to celebrate and also in desperation as we had run out of all gluten free breads in the house. (There’s never that much to begin with anyway. :( )
These are suuuuper simple to make and take about 30 minutes from start to...

Black Rice Pudding (Bubur Injin)
This is one of my all-time comfort foods (and breakfasts!). The sticky black rice, creamy coconut cream, smoky palm sugar and bananas are perfectly harmonized. The recipe is a little hazy so my apologies in advance.
Ingredients (for two small portions)
1/2 cup black glutinous rice
Few tablespoons of coconut cream (to taste)
1 banana
Palm sugar to taste
This is the palm sugar before it is...
we would love it...
…..if you recommended us for the directory this week!
Thank you!

Gluten Free Pizza
So, not surprisingly, I’ve been craving pasta and pizza since going on this gluten free madness. I’ve tried the corn pastas, and the rice ones and a few other not so fabulous noodle incarnations but never with much success. So imagine my surprise when this actually worked! Yes, a decent tasting pizza dough. I didn’t record the making of, sorry. Was too busy desperately hoping and...

Ham and Cheese Bread Pudding
Saw this recipe a few months back so when I had some cheese, ham and bread to use up it seemed a perfect time. And even more perfect, I can have leftovers for breakfast!
I think this would be even better if you played with adding some more intense flavors to it. Let us know if you come up with a good addition.
Ingredients
1 medium onion, sliced in thin rounds
1 Tbsp butter

Rice Flour Shortbread Cookies
Let me just start by saying…yeeha! They work! I’ve been trying for weeks for a cookie recipe using rice flour and finally, I’ve done it. These are soft, buttery and don’t have too much of that funky crunchy after taste that comes with using brown rice flour. I gave a dozen or so to a friend who promptly scoffed the whole box in 2 minutes. Good sign? Yes, I believe it was.

Sweet Potato And Pumpkin Salad
I was flicking through a copy of “delicious” (Miss M had very kindly brought back from Oz) skipping through endless recipes that looked divine but were instantly thrown into the too hard basket because, yes you guessed it, there was no way I would find half the ingredients, when I came across a simple, doable salad. Hurrah! No impossible ingredients, looked to be quick and easy, and...

Quick Cucumber Mint Soup
Simple yet yummy for the scorching days we’ve been having here in Bali. I love whipping this up when I’m not up to making an extravagant lunch.
Ingredients:
1 large organic cucumber, peeled and roughly cut
1 cup yogurt
1 cup of stock (I use veg cubes because my dad is vegetarian - don’t get me started on how hard this is to find here)
1 cup mint leaves
juice of 2 limes

Buckwheat and Yogurt Pancakes
This is a bit of a remix on our earlier Sunday Strawberry and Yogurt Pancakes, slightly healthier/gluten free version. Update: I am definitely staying off the wheat now, as it was making me feel very wonky indeed. Upside, get to eat as much sugar as I dang well please. Small victories.
These came out surprisingly light and fluffy, not at all what I expected from the buckwheat. Plus the yogurt...

Cashew Honey Granola
Fresh mangos and papaya? check. homemade yogurt? check. Granola? empty packet! We can buy it here but it’s expensive because of import tax, so I decided it can’t be that hard to make granola. A quick search of the web and I found this recipe. After a bit of tinkering I had some amazing homemade granola.
Ingredients
1 cup cashews
3 cups old-fashioned rolled oats

Lime Curd With Coconut Macaroon Tops
Let me just start by saying…Oh my go-! This was possibly one of the best saves from what could have been a disastrous week of baking. First my rice flour shortbreads failed, then my Coconut Macaroons, which I had such high hopes for, flopped, literally. I had to take a breath (for a couple of days) before jumping into the kitchen again. And boy, am I glad I did.
It was all going so well...

Coconut Macaroons
What do you do with left over egg whites? Why, make macaroons of course. And what do you add to most baking when you live on an island? Coconut! I found a gorgeous recipe here and went at it.
This had so much potential, especially when the lovely silky egg whites came out just as they were supposed to when whipped. So I was broken hearted when they came out of the oven flat. Until I read the...

Brown Rice Flour
I have no idea whether they have this stuff anywhere on the island, probably at some organic deli for some exorbitant price. (Don’t quote me on that). So have decided to make my own. Surprisingly easy actually. And then I will attempt to make rice flour shortbread. Yay!
Note: it was only after reading the above recipe that I found out that I should have used short grain rice (I used long...

Spice Island Apple Custard Teacake
I made this cake to take with me to lunch at a friend’s house on a rainy Sunday. Originally, the recipe called for a fragrant spice mix, which we can’t buy. But I thought, as we live in the original Spice Islands, it would be interesting to use the real thing- vanilla bean pods, nutmeg freshly ground, and whole cloves. Original recipe is here.
Ingredients
Custard
1 cup milk

Santan - Coconut Milk
I walked into the kitchen this morning to find the housekeeper busy making santan (coconut milk). It’s such a beautiful process I thought I should document it. Plus I was then rewarded with a bowl of yummy bubur kacang ijo (sweet green bean porridge made from mung beans and a variety of spices). I’ll have to get the recipe from her and put it up here one of these days. But first, the...

Cloud Souffle (Nuvolone)
Do you really need a reason to make this? Look at it, it’s gorgeous. Inspired by the wonderful Almost Bourdain I’d been dreaming of this souffle for weeks now and hadn’t come around to trying the recipe. This morning I was late for breakkie so ended up cooking this for myself, which really, really didn’t bother me. It was a surprisingly easy to cook and yes, tasted just as...

Coconut Ice Cream with Saffron
Following the great news that I’m not, yes, not allergic to sugar I decided to celebrate with ice cream. The only thing to do really. Adapted from the fabulous recipe by David Lebovitz. I don’t have a machine, so had to do this the hard(ish) way.
For some reason mine came out a lot darker than David’s. Does it matter? Nope cos it’s delish.

Chicken and Enoki Potstickers
Finding a recipe for this was quite complicated as it seems that everyone has a different name for what is basically the same little bundle of yum. I ended up using and modifying one for Chicken and Shiitake Dumplings. For mushrooms all I had were enoki.
Ingredients
Handful of enoki mushrooms (see picture)
1 chicken breast, minced
1 spring onions, white part only, finely chopped
1 garlic...

Mama's Bolognese Sauce
This is my ultimate comfort food. No one in my family is Italian but this recipe is our family one. Enjoy!
Ingredients
2 packets minced beef (approx 750g)
4 tablespoons olive oil
2 brown onion
6 cloves garlic
1 small can tomato paste
2 cans tomatoes (or the equivalent weight in fresh peeled tomatoes)
2 teaspoon oregano leaves
1 teaspoon salt
pepper
1 cup chopped fresh basil (in this...
Silky Edamame Mash Potatoes
Not much can beat a bowl of creamy mash potato as comfort food. Other than a gorgeously decadent chocolate cake served with fresh cream and…argh! Sorry, I digress - I think it’s all the denial involved in the sugar/wheat free diet. Back to the mash, I needed comfort food. Plus I’d bought a bunch of edamame, so decided to experiment. I’ve seen recipes where the beans are...

Drunken Raisin Cookies
I had a craving for rum and raisin. But, of course, no rum, so I had to settle for Grand Marnier.
Original recipe is Martha Stewart’s Rum-Raisin Shortbread.
Ingredients

2 sticks (16 tablespoons) unsalted butter, room temperature
3/4 cup confectioners’ sugar
1 teaspoon pure vanilla extract

Chocolate Orange Cookies
This is definitely not for the sugar free/ wheat free people! Sorry Miss S…
This recipe was inspired by Almost Bourdain’s Chocolate Sour Cherry Cookies but of course we don’t get the dried cherries here.
So the substitute for today is citrus peel (which we for some reason could buy) for the cherries. These cookies are seriously divine- perfect balance between chocolate and...

Yeast Free Spelt Oatmeal Bread
In accordance to my current strict regime I’ve cut bread out of my life. I’m not coping very well. I’m avoiding it, but watching friends and family tuck into a warm crusty loaf, the sound of the knife crunching into the bread followed by the whiff of melting butter on a thick slice (breakfasts have been slightly painful) was driving me a bit loola with envy. Enter spelt, one of...

Sunday Strawberry and Yogurt Pancakes
When we went to the organic market yesterday I bought some beautiful strawberries. Strawberry pancakes- perfect Sunday breakfast! The original recipe called for buttermilk but, of course, we can’t get that here, so the substitute for today is yogurt and milk for buttermilk.

1 cup plain flour
2 tsp baking powder
2 tsp sugar
1 egg
1 1/4 cup milk
1/4 cup yogurt

I am crossing my fingers and hoping you like pie. If not…

Saturday organic markets
Ubud has come a long way from the days of powdered milk, Blue Band (vile palm oil spread - before butter came to town) and overdosing on cashew nuts. The days when our mums had to make their own yogurt, pasta and breads, fainting in excitement if a wheel of anything other than Anchor rubber cheese made it into one of the “supermarkets” down south.
Cut to 2010, where we now have our...
